This pie was baked in a large baking sheet (12" x 18") and packed with 8 lbs of the sweetest and ripest peaches from my local farmers market. Sweet summer flavour packaged in flaky short crust pastry. It was sure liked by my church community last Sunday at our monthly dinner.
